**TL;DR** - **Chipotle mayo makes chips even better.** Mayonnaise and chips are a truly glorious combination. It is impossible to articulate fully why it works. To give a very bland truism as an argument, the combination is great because it is. _That said_, it can be improved. By mixing mayonnaise with chipotle chillies adds a smokiness and spice to the condiment. It helps to balance out the saltiness and just adds depth of flavour. Just try it!

This is not an uncommon combination, with [Heinz] (https://www.tesco.com/groceries/en-GB/products/304408612) selling it as a sauce on its own. It also a common thing in Germany, known as Rot Weiß, literally meaning red white. Apparently it is sold in toothpaste style tubes which doesn't sound great but the mix itself is glorious. I am not sure about the need to buy the ready-made sauces as it is very easy to make, but to each their own. If you have not tried it, give it a go. It is a game changer!
